En su parte montañosa, Auvernia, se caracteriza por ser una región de cría de ganado orientada hacia la producción láctea, cuna de las razas bovinas salers y aubrac. Se distingue por su producción de quesos AOC con seis  especialidades: Quatro quesos AOC de Auvernia  Cantal, Bleu d'Auvergne, fourme d'Ambert, Saint-Nectaire.
Tan sólo en la región de Auvernia se concentra el 26 % de los quesos con DOP (Denominación de Origen Protegida) Francia. Los más famosos se llaman Cantal, Salers, Fourme d’Ambert, Bleu de Auvergne y Saint-Nectaire, y se siguen fabricando, todavía hoy, con un respeto escrupuloso de las técnicas tradicionales.
